Ingredients for 4 servings:

  • 750 g fruit, to taste
  • 1 sachet of vanilla sugar
  • 100 g butter or margarine
  • 175 g sugar
  • 3 egg yolks
  • 5 rolls, stale
  • 500 ml milk, hot
  • 75 g semolina
  • 3 egg whites

If using fresh fruit, wash, peel, core, and cut into small pieces if necessary. If using canned fruit, drain well; you won’t need the juice later. Sprinkle the prepared fruit with vanilla sugar. Cut the rolls into slices, then place them in a bowl, pour over the hot milk, and let them soak. Beat the butter (or margarine) and sugar until light and fluffy, gradually stir in the egg yolks, then add the soaked roll mixture and semolina. Beat the egg whites until stiff peaks form and carefully fold them into the mixture. Layer the batter and fruit in a greased dish. The bottom and top layers are the batter. Bake in a preheated oven on the middle rack at around 200°C for around 45-55 minutes. Tastes best warm; you can serve it with vanilla sauce, but it’s also delicious cold.
