Ingredients for 20 servings:

  • 2 bananas
  • 1 lemon(s)
  • 2 tbsp rum
  • 250 g butter
  • 150 g sugar
  • 4 eggs
  • 330 g flour
  • 2 tsp baking powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat oven to 200 degrees Celsius (400 degrees Fahrenheit). Peel the bananas and mash them finely with a fork. Stir in the rum and lemon juice. Beat the butter and sugar until fluffy. Add the eggs one at a time. Mix the flour with the baking powder and lemon zest. Stir in the banana puree. Spread the batter onto a greased baking sheet and bake for 30 minutes until golden brown. Cut into approximately 20 slices. Tip: The cake can be decorated with dark chocolate and, if desired, with banana chips.
