Ingredients for 12 servings:

  • 1 pack of ready-made lemon cake mix
  • 2 limes, untreated or well washed
  • 12 pieces of sweets, jelly confectionery (citrus fruits) and possibly sugar pearls
  • 1 pck. Cake icing, lemon (or make your own with powdered sugar)
  • 1 tbsp cornstarch or flour

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Lemon-Lime Muffins

Prepare the lemon cake batter according to the instructions. Grate the lime zest and add it to the batter. Squeeze the limes and add the juice to the batter. Add the tablespoon of cornstarch or flour and stir everything together again. Line a muffin tin with paper baking cups or grease it, divide the batter evenly among all 12 cups, and bake according to the instructions. Remove the muffins and glaze them. Place the jelly candy in the wet glaze and press down lightly. Decorate with lime zest strips (using a special knife) and sugar pearls.
