Ingredients for 1 servings:

  • 125 g butter
  • 250 g sugar
  • 175 g flour
  • ½ pack of baking powder
  • 5 egg yolks
  • 125 g ground nuts, almonds or walnuts
  • 5 egg whites
  • Jam, dark, e.g. currant or blackberry jam
  • some liqueur, for flavoring, optional

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Cream the butter until fluffy. Stir in 125g of sugar, then the egg yolks. Then stir in the flour mixed with the baking powder. Spread the batter into a springform pan. Spread the jam (mixed with a little liqueur if desired) on top. Beat the egg whites until stiff peaks, stir in the remaining sugar, and fold in the ground nuts or almonds. Spread the mixture over the jam. Bake at 175°C for about 45 minutes (reduced if using a fan oven). Note: This is an old family recipe from my mother’s family; it was a must-have for every birthday or wedding. It keeps for a very long time if kept cool and can therefore be baked in advance. For a large baking tray, simply double the amount.
