Low-carb protein rolls

Ingredients for 4 servings:

  • 3 m.-sized eggs
  • 250 g low-fat curd cheese
  • 2 tbsp sunflower seeds
  • 2 tbsp flaxseed
  • 1 tbsp pumpkin seeds
  • 15 g psyllium husks
  • 55 g oat bran or spelt bran
  • 2 tbsp soy flakes, ground yourself
  • 1 packet of baking powder
  • ½ tsp, leveled salt
  • some seeds for sprinkling or rolling

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Low-carb dinner

Mix the eggs with the quark. Add the remaining ingredients. Let the dough rest for 15 minutes. Preheat the oven to 220°C (top and bottom heat). Form the dough into 4 equal-sized, oblong rolls and roll them in the seeds. I always use sesame seeds, flax seeds, pumpkin seeds, and sunflower seeds. Slightly cut the rolls in the middle and bake for 30 minutes.
