Ingredients for 1 servings:
- 400 g rhubarb
- 100 g butter or margarine, soft
- 3 eggs
- 200 g sugar
- 100 g chocolate, diced
- 200 g flour
- ½ pack of baking powder
- 1 packet of vanilla sugar
- 1 pinch of salt

Peel the fresh rhubarb and cut into small cubes (approx. 1 to 1.5 cm). Combine the butter/margarine, eggs, salt, sugar, and vanilla sugar in a bowl and beat until fluffy for about 3 minutes. Then stir in the flour and baking powder and beat again. Finally, add the rhubarb and chocolate cubes and fold in well. Pour the batter into a loaf pan and bake in a preheated oven at 180°C for about 60 minutes, until the cake is golden brown. I always line the loaf pan with baking paper, which saves me the hassle of greasing and makes it easy to remove the cooled cake from the pan.
