Spinach casserole with tomatoes and feta cheese

Ingredients for 2 servings:

  • 500 g spinach, frozen
  • 100 g sheep’s cheese
  • 10 small tomatoes
  • 100 g yogurt
  • 1 tsp stock powder
  • salt and pepper
  • Thyme

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Heat the spinach. Season with salt, pepper, and a little granulated stock. Cut the feta cheese into small cubes and mix with the yogurt. Season with pepper and granulated stock. Slice the tomatoes. Place the heated spinach in a baking dish, arrange the mixed feta cheese flakes on top of the spinach, and place the tomato slices in between. Sprinkle with a little thyme. Bake in a preheated oven at 200°C (fan oven) for about 20 minutes on the middle rack. The quantities given are for a side dish; if you’re serving it as a main course, I recommend double the amount. Serve with fresh ciabatta.
