Ingredients for 2 servings:

  • 2 cans of white beans in tomato sauce
  • 2 m.-large tomato(s)
  • 1 bunch of spring onions
  • 1 pkt. Feta cheese, 250 g
  • olive oil
  • pepper
  • oregano

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Place the white beans and tomato sauce in a casserole dish. Wash the tomatoes, remove the stems, and dice them. Slice the spring onions into small rings. Mix the two together, season with pepper, and add about 1 tablespoon of olive oil. Spread the tomatoes and feta cheese over the casserole and season with oregano, if desired. Bake the casserole in the oven at 180-200 degrees Celsius (350-400 degrees Fahrenheit). This dish goes well with baguette or, for example, rosemary potatoes. Leftovers can also be eaten cold the next day.
