Pasta with leek and tomato sauce

Ingredients for 4 servings:

  • 2 cans tomatoes, chopped
  • 1 leek(s)
  • 1 garlic clove(s)
  • 3 tsp vegetable broth
  • 3 tbsp mixed herbs
  • 500 g pasta
  • salt and pepper
  • olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Finely chop the leek and garlic. Sauté the leek in a pan with olive oil over medium heat for about 10 minutes, until almost softened. Then add the canned tomatoes, garlic, broth, and herbs, simmer for 10 minutes, and season with salt and pepper. Meanwhile, cook the pasta according to the package instructions and serve with the sauce.
