Ingredients for 1 servings:
- 200 g biscuits (gingerbread or butter biscuits)
- 100 g butter, melted
- 400 g cream cheese (Philadelphia natural)
- 500 g Skyr (vanilla flavor)
- 200 g sugar
- 3 tbsp cornstarch
- 1 egg(s)
- 1 dash of cream
- 2 tbsp lemon juice
- 1 jar of jam of your choice

Crumble the biscuits and mix with the melted butter. Place them in a springform pan and bake for 10 minutes at 180°C (top/bottom heat). Meanwhile, combine the Philadelphia, Skyr, sugar, and cornstarch. Then add the egg, lemon juice, and a dash of cream (not whipped) and mix well. Gently stir everything in; do not beat! Remove the base from the oven and spread with the jam. Then spread the cheese mixture on top. Bake the cake for another 30-40 minutes at 180°C, until the top is golden brown.
