Florentine-style broccoli salad

Ingredients for 2 servings:

  • 300 g broccoli, fresh or frozen
  • 2 tomatoes
  • ¼ cucumber(s)
  • 100 g cooked ham (about 3 slices)
  • 1 spring onion(s)
  • 3 tbsp salad cream (Miracel Whip, so easy)
  • 3 tbsp light cream
  • 3 tbsp balsamic vinegar bianco or mild white vinegar
  • salt and pepper
  • some parsley
  • some dill
  • possibly sweetener, liquid

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cut the fresh broccoli into small florets and cook for a few minutes until al dente, then rinse in cold water. Pour boiling water over the frozen broccoli and let it stand for about 4-5 minutes, then rinse in cold water and cut into small florets. Dice the tomatoes, cucumber, and ham. Finely slice the spring onion. Mix the Miracle Whip, crème fraîche, and balsamic vinegar with salt, pepper, and herbs until smooth and season to taste. If it’s too acidic, stir in a little sweetener and season again. Add the tomatoes, cucumber, ham, spring onion, and broccoli to the dressing and gently fold in. Let it marinate in the refrigerator for at least 1 hour. It’s perfect as a SiS evening meal, but also as a low-calorie, low-fat party salad.
