Quick tomato and lemon salad

Ingredients for 3 servings:

  • 1 lemon(s), organic, grated peel, juice of one half
  • 500 g tomatoes
  • 200 g cottage cheese
  • some basil leaves, fresh
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil

Instructions

refreshing and simple summer side dish

Wash the lemon, grate the zest, and squeeze the juice of 1/2 lemon. In a bowl, combine the cottage cheese with the grated lemon zest and lemon juice. Dice the tomatoes and mix them in a second bowl with the olive oil and balsamic vinegar. Season with salt and pepper. Finely chop the basil leaves and stir in. Arrange the tomatoes on top of the cottage cheese and garnish with some basil.
