Ingredients for 2 servings:

  • 1 large sweet potato(s)
  • 1 tbsp cheddar cheese
  • 1 tsp sour cream
  • 1 tsp butter
  • 1 dashes lime juice
  • n. B. Herbal salt, with savory
  • a few stalks of flat-leaf parsley
  • e.g. chili
  • drops of olive oil

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

totally simple calorie bomb or side dish

Peel the sweet potato, roughly dice it, and then boil it in salted water until very soft. For consistency, you can also add a small regular potato. This will give the mashed potato just as much of a sweet potato flavor. Meanwhile, grate or dice the Cheddar cheese. Preheat the oven to the highest possible top heat setting. Roughly tear the parsley leaves. Drain the potatoes and then either beat them finely with a hand mixer or roughly mash them with a potato masher. Add the butter, sour cream, and herb salt. Season to taste with a squeeze of lime juice. Fold in the cheese and parsley, spread into an ovenproof dish, brush with oil, and place in the oven. When the layer on top becomes brown and crispy, remove the dish from the oven. You can also leave the parsley out of the mashed potato and sprinkle it on just before serving.
