Broccoli – minced meat – sauce for pasta

Ingredients for 4 servings:

  • 400 g broccoli
  • 125 ml vegetable stock
  • 1 onion(s)
  • 1 tbsp oil (e.g. rapeseed oil)
  • 250 g minced beef
  • 100 ml cream, cooking cream or milk
  • salt and pepper
  • small carrot(s) for decoration

Wash the broccoli, trim the stalks, and slice them. Bring the vegetable stock to a boil in a saucepan, add the broccoli florets and stalks, and simmer with the lid on over medium heat for about 15 minutes. Meanwhile, peel the onion, halve it, and finely dice it. Heat the oil in a pan, sauté the onion, and add the ground beef. Season the beef with salt and pepper and cook vigorously for about 8 minutes, stirring constantly to break up the beef. Finely puree the broccoli with a hand blender, add the cream (or milk) and the beef, and season to taste. I serve this sauce with whole-wheat pasta and garnish it with grated carrots.
