Banana-Mango Soup

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 tbsp oil
  • 1 large mango(s)
  • 3 large bananas
  • 1 lemon(s), juice
  • 1 liter chicken broth or vegetable broth
  • 2 tsp, heaped curry powder
  • possibly salt
  • some sugar
  • e.g. chili
  • 100 g sour cream or vegan substitute
  • n. B. Lemon balm for garnishing

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel and finely chop the onion, and sauté in oil until translucent. Meanwhile, peel the mango, remove the stone, and puree it. Peel the bananas, mash them with a fork, and drizzle with lemon juice. Deglaze the translucent onions with the broth. Add the bananas and mango, season with spices, and heat gently over low heat. Just before serving, carefully stir in crème fraîche or similar. Garnish with a few lemon balm leaves.
