Ingredients for 1 servings:

  • 4 large eggs
  • 4 tbsp water, cold
  • 160 g sugar
  • 160 g flour
  • ¼ tsp, leveled baking powder
  • Jam (strawberry jam or other favorite jam)
  • powdered sugar

Instructions

First, preheat the oven to 225°C (425°F) using conventional ovens. Separate the eggs and beat the egg whites with 4 tablespoons of cold water until stiff peaks form. Then slowly add the sugar, beating until the mixture is glossy and glossy. Briefly stir in the egg yolks, stirring only until the egg yolks are combined with the egg whites. Sift the flour and baking powder over the dough and gently fold it into the egg mixture using a flat whisk or wooden spoon. Spread the dough evenly onto a baking sheet lined with baking foil/parchment paper. Bake immediately in the hot oven for about 8 minutes; the dough should feel fluffy and soft and dry on top. Then turn it out onto a sheet of foil or a tea towel, spread with your favorite jam, and roll up tightly. Place it on a Stollen plate, dust with powdered sugar if desired, and trim the edges. If you want to fill the roll with cream for a change, it needs to be just cold, so you can roll it up easily without breaking! It’s really quick!
