Ingredients for 1 servings:

  • 1 jar morello cherries
  • 260 g flour (type 405)
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • 3 tbsp cocoa powder
  • ¾ bar of semi-sweet chocolate
  • 2 eggs
  • 120 g sugar
  • 80 g oil
  • 220 g milk
  • 12 paper baking cups
  • possibly cake icing (chocolate glaze)

The best chocolate cherry muffins I’ve ever tried. Makes 12

Makes 12 muffins. Drain the morello cherries in a sieve. Finely chop the chocolate with a kitchen knife. Mix the flour with the baking powder, baking soda, cocoa powder, and the finely chopped chocolate. Beat the eggs and sugar until frothy. Gradually add the oil and milk. When everything is nice and smooth, add the flour and the remaining ingredients and continue stirring. Finally, fold in the cherries. Place paper baking cups in the muffin tin. Divide the mixture among the cups and use up all the ingredients. Bake in a preheated oven at 160°C on the middle rack for 20-25 minutes. If desired, top with chocolate glaze.
