Zucchini Brownies

Ingredients for 12 servings:

  • 500 g zucchini
  • 280 g flour
  • 2 tsp baking soda
  • ½ tsp baking powder
  • 50 g cocoa
  • 200 g butter
  • 1 pinch of salt
  • 180 g dark chocolate
  • 180 g sugar
  • 2 eggs
  • 120 g natural yogurt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Wash the zucchini, grate it finely, and let it drain in a sieve. Melt the butter and 100g of chocolate and let it cool. Roughly chop the remaining chocolate. Mix all the dry ingredients together. Beat the sugar and eggs until fluffy. Add the butter-chocolate mixture and the yogurt and mix well. Then add all the dry ingredients and mix briefly until everything is well combined. Briefly stir in the zucchini and chopped chocolate and pour the batter into a greased and floured square springform pan. Place in the preheated oven (175°C top/bottom heat) and bake for 35-40 minutes. Do not bake for too long, or they will become dry.
