Ingredients for 1 servings:
- 200 g margarine
- 200 g sugar
- 1 packet of vanilla sugar
- 4 eggs
- 200 g flour
- 2 tsp baking powder
- 3 sheets of white gelatin
- 1 pack of pudding powder, vanilla
- 50 g sugar
- 500 ml milk
- 250 g crème fraîche
- 1 kg mixed fruit
- 3 packs of cake glaze, clear
- 750 ml water
- 6 tbsp sugar
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Fruit cake from the tray
Beat the margarine with a mixer until smooth, gradually adding the sugar and vanilla sugar, and continue stirring until the mixture is thickened. Gradually beat in 4 eggs. Mix the flour with the baking powder and stir in in portions. Spread the batter onto a greased baking tray (approx. 30 x 40 cm) and place a baking frame around it. Place the tray in a preheated oven and bake at 160°C for approx. 20 minutes. Then let the base cool. For the topping, soak the gelatine in cold water (see package instructions). Make a pudding from the pudding powder, sugar, and milk. Stir the squeezed gelatine into the hot pudding and let cool slightly. Then fold in the crème fraîche. Spread the pudding cream over the base. Clean and wash the fruit, cut it accordingly, and spread it over the pudding cream. Now make the glaze from the water, sugar, and cake glaze and spread it over the cake.
