Radish and white sausage salad

Ingredients for 4 servings:

  • 400 g radish(s), red, alternatively radishes
  • some salt
  • 300 g white sausage
  • 2 m.-large onion(s), red
  • 2 gherkins
  • 2 tbsp mustard, sweet
  • 4 tbsp white wine vinegar
  • Pepper from the mill
  • 8 tbsp sunflower oil
  • 1 bunch of chives
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Peel the radish and slice it thinly. Sprinkle it with salt and let it rest in a bowl for 15 minutes. In the meantime, cook the white sausage in hot water for 5-7 minutes. Drain and let it cool slightly. Peel the white sausage and slice it. Peel the onions and slice them thinly. Drain the gherkins and slice them too. For the dressing, mix the mustard with vinegar, oil and pepper. Wash the chives, spin them dry and cut them into fine rolls. Toss the chives with the vinaigrette. Mix the sausage, radish, gherkins and onions in a bowl and pour over the dressing. Season again with pepper and salt and let the salad rest for about 15 minutes. Pretzels or bread rolls go very well with this.
