Ingredients for 1 servings:
- 100 g parsley root(s)
- 1 tsp olive oil, good
- 1 tsp mustard
- 2 tbsp milk
- 1 tsp lemon juice, freshly squeezed
- 1 pinch of salt
- some pepper from the mill
- possibly herbs, freshly chopped
Instructions

with raw root parsley
Peel and coarsely grate the parsley root. Make a smooth salad dressing from olive oil, mustard, milk, salt, and pepper. Mix in fresh herbs such as parsley or basil, if desired. This raw vegetable salad is a perfect addition to your usual raw vegetable salads, especially since parsley root is usually underrated as a soup vegetable. Raw, it has a delicate, slightly sweet, mild flavor reminiscent of a mixture of parsley, carrot, and celery.
