Aloha's Apple Cake with Ricotta

Ingredients for 1 servings:

  • 200 g butter or margarine
  • 200 g sugar
  • 1 packet of vanilla sugar
  • 3 eggs
  • 1 tsp lemon zest, grated
  • 2 tsp baking powder
  • 250 g flour
  • 150 g ricotta
  • 1 kg apples, sour
  • 3 tbsp liqueur (almond liqueur)
  • 100 g almond flakes
  • some lemon juice
  • some powdered sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 35 minutes

Peel, core, and quarter the apples. Score the curved side several times. Mix with lemon juice and set aside. Cream together the butter, sugar, vanilla sugar, and grated lemon zest until creamy. Then beat in the eggs, one at a time. Mix the flour and baking powder and stir into the mixture alternately with the ricotta. Preheat the oven to 175 degrees Celsius. Pour the batter into a greased springform pan and cover tightly with the apples, cut side up, pressing the apples in lightly. Bake the cake on the middle rack for about 60 minutes. 10 minutes before the end of the baking time, scatter the almond slivers evenly over the cake and bake with it. After the end of the baking time, remove the cake from the oven and let it rest for 5-10 minutes. Remove the pan and brush the still warm cake with the almond liqueur. Let it cool and dust with powdered sugar.
