Crispy waffles with corn flour

Ingredients for 1 servings:

  • 425 ml buttermilk
  • 2 large eggs
  • 70 g butter, melted
  • 240 g wheat flour
  • 170 g corn flour
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 3 tbsp chives (dried) or 2 tbsp fresh
  • ¼ tsp cayenne pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix the buttermilk with the eggs and the melted, cooled butter. Combine the two flours, sugar, salt, baking powder, and baking soda, then add to the buttermilk mixture and stir in. Add the chives and cayenne pepper and stir in. Then bake the batter in a preheated waffle iron according to the manufacturer’s instructions. You may need additional butter; I don’t need any with my waffle iron. The waffles taste delicious warm or cool. You can eat them simply with a little sour cream or with salsa or soup. If desired, you can also add finely chopped, sun-dried tomatoes to the batter.
