Spelt chocolate cookies

Ingredients for 1 servings:

  • 115 g butter
  • 4 tbsp cane sugar
  • 1 packet of vanilla sugar
  • 1 egg(s)
  • 125 g flour, spelt
  • ½ tsp baking powder
  • 1 pinch of salt
  • 100 g chocolate (chocolate chips) or chopped dark chocolate
  • 1 tbsp cocoa powder
  • 30 g almond(s), ground

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Beat the butter, brown sugar, and vanilla sugar in a bowl with the whisk attachment of a hand mixer until fluffy. Add the egg and mix well. Stir in the flour, baking powder, and salt. Add the chopped chocolate and chocolate chips. Finally, fold in the cocoa powder and ground almonds. Preheat the oven to 180°C (top and bottom heat). Using the palm of your hand, form the dough into small balls and place them on a baking sheet lined with baking paper. Flatten the balls slightly with the palm of your hand. Bake in the oven on the middle rack for about 10 minutes, depending on the size. Remove from the oven and let cool. Then bake the remaining cookies in the same way. The cookies can be stored in a tightly sealed container for about 3 weeks.
