created from leftovers – but super delicious

Cook the spaetzle according to the package instructions. In the meantime, slice the cleaned spring onions into small rings and dice the washed bell peppers. Melt a little butter in a pan and briefly fry the finely chopped salami (or diced bacon). Add the drained spaetzle and let it cook for a short while. Then stir in the spring onions and bell peppers. Crack the eggs into a separate bowl and mix with a splash of milk using a fork. Pour over the spaetzle and let it set. Season with pepper and salt, stirring occasionally. Sprinkle with grated cheese. Cover the pan and let the cheese melt. Stir again if necessary!
