Tomato sauce with tuna and zucchini

Ingredients for 2 servings:

  • olive oil
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 1 chili pepper(s)
  • 1 zucchini (courgettes)
  • 1 small can of tomatoes, chopped
  • 50 ml broth
  • 1 can of tuna
  • Balsamic vinegar
  • salt and pepper
  • 1 pinch(s) of sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Finely dice the onion, garlic, and chili pepper. Finely chop the zucchini and sauté in a little olive oil. Add the diced tomatoes and the broth. Loosen the tuna with a fork and add it to the sauce. Season the sauce with a little balsamic vinegar, salt, pepper, and a pinch of sugar. Simmer over medium heat until thickened. Serve with pasta, rice, or Ebly.
