Maultaschen casserole with spinach

Ingredients for 4 servings:

  • 600 g Maultasche(n) from the refrigerator, alternatively tortellini or tortelloni
  • 1 onion(s)
  • 3 tbsp oil
  • 500 g leaf spinach, frozen
  • 200 ml water
  • 2 tomatoes
  • 1 cup of cream
  • 100 g mountain cheese
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes

Dice the onion and sauté in 1 tablespoon of oil. Add the frozen spinach and water, bring to a boil, season with salt and pepper, and simmer for about 5-8 minutes. Preheat the oven (electric oven 200°C, fan oven 180°C). Quarter the Maultaschen and fry in 2 tablespoons of oil for 5 minutes until browned. Grate the cheese. Dice the tomatoes, add them to the spinach with the cream, and season with nutmeg, salt, and pepper. Place the Maultaschen and spinach in a baking dish, sprinkle with the cheese, and bake for about 12-15 minutes.
