inexpensive, simple
Boil the potatoes in their skins until al dente, drain, and cover to cool. Boil the green beans in salted water until tender, drain, rinse, and set aside. Place the beans in a sieve and rinse under running water. Peel the onion, halve it, and cut into not-too-thin rings. Roughly chop the parsley leaves. Peel the potatoes, cut into 1 1/2 cm thick slices, and fry in a little oil until golden brown. Remove the potatoes from the pan and set aside. Heat 1 tablespoon of butter in the remaining fat. Sauté the onion, green beans, and beans in it, seasoning with salt, pepper, rosemary, and crushed garlic. Mix in the potatoes, and serve the vegetable pan sprinkled with parsley. It also tastes delicious fried with garlic sausage, sprinkled with some cheese, and bake in the oven.
