Jockel's cookies for the pastry press

Spread the love

Ingredients for 1 servings:

  • 150 g flour
  • 45 g ground almonds or hazelnuts (both taste very good)
  • 90 g butter
  • 50 g powdered sugar
  • some vanilla sugar
  • 1 egg yolk
  • 1 tbsp milk

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Makes about 40 cookies

Using a dough hook, make a shortcrust pastry from the first 6 ingredients. Then, depending on the consistency of the dough, add 1-2 tablespoons of milk and knead everything well. You can now pour the dough directly into a cookie press fitted with the desired stencil and press the cookies onto a cold baking sheet (without baking paper!). Let them cool while the oven preheats to 200°C, then bake them for about 12 minutes. The baking time depends heavily on whether you have an aluminum baking sheet or a regular black one. With an aluminum baking sheet, it will take the specified 12 minutes, with the other a bit less. This dough is enough for 2 baking sheets, each with about 20 cookies.
