Fanta lemon muffins

Ingredients for 1 servings:

  • 250 g flour
  • 100 g butter or margarine
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 1 packet of baking powder
  • 5 tbsp milk
  • 100 ml lemonade, e.g. Fanta or other orange soda
  • Lemon peel, grated or citroback

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 30 minutes

for 12 pieces

Combine flour, butter or margarine, sugar, vanilla sugar, eggs, baking powder, and milk in a large bowl and mix to form a thick batter. Then add Fanta (or more or less than directed; it’s best to taste) and lemon zest to taste. Mix everything well and fill 12 muffin cups. Bake at 170°C (top/bottom heat) for about 10-15 minutes; they should still be light yellow. Let cool for at least an hour. Tip: If desired, drizzle with sugar or chocolate icing over the muffins. You can use orange zest instead of lemon zest.
