Super quick flat cake base for 26cm springform pan

Ingredients for 1 servings:

  • 100 g butter
  • 75 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 100 g flour
  • 1 tsp, leveled baking powder
  • 1 pinch of salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

for fruit cakes, Swedish applesauce cake, etc., for 8 pieces

Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit) top/bottom heat. Grease and flour a 26 cm springform pan. Beat the eggs with butter, sugar, and vanilla sugar until frothy. Combine the flour with the baking powder and a pinch of salt, then stir into the beaten ingredients. Pour into the prepared springform pan, smooth the surface, and place the pan on the lowest rack in the oven. Bake for about 20 minutes. Test with a skewer for doneness. Top with any fruit. During strawberry season, I mix sour cream with low-fat quark, sweeten to taste, and then top with the fruit, which I then cover with glaze.
