Slice the potatoes into wafer-thin slices using a slicer. Depending on the shape of the potatoes, slice them vertically or horizontally. The potato slices should be almost transparent, otherwise the chips will be too thick. Place these slices in a bowl and sprinkle them with paprika, oregano, and salt, and mix well with your hands, ensuring each potato slice gets a little. You can buy paprika and oregano in bulk for little money in Turkish supermarkets. Sweet paprika is called “Tatli Toz Biber,” and oregano is called “Dag Kekik.” Place two baking sheets or racks in the oven and preheat to 150°C (convection or hot air). Line two sheets of parchment paper with the slices, then place the sheets on the racks in the oven. Baking time is approximately 18 minutes. Drying and browning may vary depending on the oven level; the rack directly exposed to the hot air stream will be drier and browner. Practice makes perfect here, including when seasoning the slices. The chips can then release additional moisture (if any) in a large bowl. Different flavors can be achieved by changing the seasonings. Using liquid seasonings (e.g., balsamic vinegar) may increase the baking time.
