Ingredients for 4 servings:
- 750 g potatoes, boiled (from the previous day)
- 2 eggs
- Salt
- 1 pinch of nutmeg
- 75 g flour
- 125 g cheese, grated
- Flour , for editing
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes
Peel and grate the boiled potatoes from the previous day, mix with all the ingredients, and season to taste. Form a log, cut into 12 to 14 pieces, and roll into dumplings with floured hands. Coat the dumplings in a little flour. Place in about 2 liters of boiling salted water and add the dumplings. Leave the lid slightly ajar and let the dumplings simmer over low heat for 10 to 15 minutes.
