Apple muffins with cinnamon crust

Ingredients for 1 servings:

  • 250 g flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 115 g butter
  • 200 g sugar
  • 2 eggs
  • 1 packet of vanilla sugar (Bourbon vanilla)
  • 190 g apples, diced
  • 70 g sugar, brown
  • 1 tbsp flour
  • 1 pinch(s) cinnamon, generously
  • 1 tbsp butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 180°C and grease a muffin tin or line it with paper baking cups. Beat the eggs with butter, sugar, and vanilla sugar until frothy. Combine the flour, baking powder, baking soda, and salt and fold in two portions. Finally, stir in the diced apples. Fill the muffin cups 3/4 full with the batter. For the cinnamon crumble, combine the sugar, flour, and cinnamon, then add the butter. Rub it between your fingers until crumbly. Sprinkle the muffins with the mixture and bake for about 20 minutes.
