Ingredients for 1 servings:
- 3 egg whites
- 80 g sugar
- 2 tsp lemon juice
- 175 g desiccated coconut

makes about 40 cookies
Beat the egg whites until stiff. Gradually add the sugar, then stir in the lemon juice. Fold the desiccated coconut into the batter. Using two teaspoons, place small heaps, spaced slightly apart, on a baking sheet lined with parchment paper. Moisten a spatula and your fingertips with water and shape each heap into a pyramid. Bake the macarons in a preheated oven at 150°C for about 20 minutes. They should only brown slightly; cover with parchment paper if necessary. Remove and let cool.
