Asian Chinese cabbage salad with mandarins

Ingredients for 3 servings:

  • 300 g Chinese cabbage
  • 200 g cherry tomatoes or large tomatoes
  • 1 can tangerine(s), approx. 300 g
  • 8 tbsp oil, neutral, e.g. rapeseed oil
  • 4 tbsp red wine vinegar, white wine vinegar or similar
  • 2 small onions, chopped
  • 2 garlic cloves, squeezed
  • 1 pinch(s) curry powder
  • some salt and pepper
  • 4 tbsp soy sauce, light

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Total time approx. 25 minutes

Cut the Chinese cabbage into strips. Halve the cherry tomatoes, peel and dice the large tomatoes. Drain the mandarin oranges and add them. For the dressing, combine all the remaining ingredients and pour over the salad. Mix well and let stand briefly.
