Ingredients for 4 servings:

  • 375 ml milk
  • 3 tbsp butter or margarine
  • 1 tsp lemon juice
  • Nutmeg, grated
  • 1 pinch of salt
  • 125 g semolina
  • 1 egg(s)
  • 10 g breadcrumbs

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Bring the milk to a boil with 1 tablespoon of butter, the lemon juice, nutmeg, and a good pinch of salt. Remove the pan from the heat and slowly stir in the semolina. Let it cook for a few minutes, then let it cool slightly. Stir the egg into the semolina porridge and let it cool slightly. Form the semolina mixture into dumplings and cook slowly in boiling salted water over medium heat for about 10 minutes until tender. Remove the dumplings, drain well, and place in a warmed bowl. Brown the breadcrumbs in the remaining fat and sprinkle over the top. TIP: Serve with cooked dried fruit, compote, or meat with sauce. VARIATION: If desired, press toasted bread cubes into the semolina dumplings before cooking.
