Ingredients for 4 servings:

  • 1 kg potato(s), waxy
  • 200 g cheese, grated
  • 250 g cherry tomatoes
  • 2 onions
  • 4 cloves garlic
  • ½ bunch parsley
  • 3 sprigs of rosemary
  • 3 stalks of thyme
  • some salt
  • some pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

vegetarian casserole made from potatoes, tomatoes and herbs

Peel the potatoes and halve or quarter them, depending on their size. Then cook them for about 10-15 minutes. Meanwhile, preheat the oven to 200°C (fan oven). Wash and halve the tomatoes, chop the onions, and fry them. Once cooked, place the potatoes in a baking dish and add the tomatoes and onions, herbs, spices, and finely chopped garlic cloves, and mix well. Sprinkle the cheese over the potatoes. Bake in the oven for about 30 minutes.
