Rice Salad – Easy, Quick and without Mayonnaise

The perfect rice salad – easy, quick and without mayonnaise recipe with a picture and simple step-by-step instructions.

  • 250 g Basmati rice
  • 500 ml Hot water
  • 1,5 tsp Herbal salt (you can also use vegetable broth)
  • 0,5 tsp Pepper
  • 2 Toes Garlic
  • 6 tbsp Olive oil
  • 4 tbsp Condimento bianco (light vinegar)
  • 1 Can Kidney beans
  • 1 small can Corn
  • 1 small can Peas (or equivalent amount of frozen)
  • 3 piece Spring onions
  • 1 small Red pepper
  • 2 tbsp Chopped parsley
  • 2 tbsp Salt and pepper
  1. Weigh the rice and wash it thoroughly. To do this, we put it in a bowl and run in cold water. Hand wash the rice and then drain off the water. Repeat the process once, put the rice in a sieve and let it drain briefly.
  2. Put the herb salt and pepper in a microwave-safe dish / bowl and spread the rice on top. Add 500 ml of hot water and cover in the microwave. Cook on about 850 watts for 18-19 minutes. ….. You can also cook the rice conventionally in a pot. I just like doing it in the microwave because it works easily and works by itself.
  3. In the meantime, drain and drain the beans, peas and corn.
  4. When the rice has finished cooking, transfer it to a large bowl while it is still hot.
  5. Press the garlic through the press into the hot rice, add the oil and vinegar and mix well.
  6. While the rice is cooling down a bit, we prepare the spring onions, they are cleaned, washed and cut into fine rings.
  7. Wash and clean the peppers as well. Cut into small cubes.
  8. When the rice is still lukewarm, add all the ingredients, mix well and season to taste.
  9. Cool the rice salad and let it steep a little.
