Wash the chicken breast or turkey, finely dice it, add it to the water, add salt if desired, bring it to a boil, and simmer for 30 minutes. Peel the potatoes, wash them, and finely dice them, then add them to the broth. When the potatoes are tender (in about 10-15 minutes), add the finely sliced ​​Chinese cabbage and tomato paste and cook for another 5 minutes – done! Mash with a potato masher if desired. I also add a few croutons; they expand and make the baby borscht even more filling.
