Baked chicken fillet on Brussels sprouts

Ingredients for 4 servings:

  • 500 g chicken fillet(s)
  • 700 g Brussels sprouts
  • 70 g bacon, streaky
  • 2 large onions
  • 200 g mushrooms
  • 100 g cheese, grated
  • 1 tbsp parsley, chopped
  • salt and pepper
  • Fat for the mold
  • Oil for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

Cook the Brussels sprouts in salted water for about 10 minutes, drain, and place in a greased baking dish. Dice the onions and bacon, and slice the mushrooms. Fry the bacon until crispy, then sauté the onions and mushrooms in it and season. Then spread it over the Brussels sprouts. Fry the chicken fillets in hot oil until golden brown on all sides, season, and finally add to the baking dish. Finally, sprinkle with grated cheese. Bake in a hot oven at 180°C (convection oven) for about 20 minutes, taking care not to overbrown the cheese. Sprinkle with parsley before serving. This goes very well with mashed potatoes or simply with baguette.
