Ingredients for 4 servings:
- 1 m.-large cucumber(s)
- 2 m.-large tomato(s)
- 2 large gherkins
- 75 g pearl onions
- 1 bunch of dill
- 1 tbsp, heaped lovage, chopped
- 30 ml olive oil
- 40 ml cucumber juice
- 1 dashes apple cider vinegar, 5% acid
- 1 tbsp, heaped paprika powder, sweet
- 1 tsp, levelled pepper, white
- n. B. Salt
- e.g. diced feta cheese as a topping
Instructions
Working time approx. 10 minutes; Rest time approx. 30 minutes; Total time approx. 40 minutes
a fresh summer salad
Wash the cucumber and tomatoes and cut into small cubes. Dice the gherkins and finely chop the pearl onions. Wash the dill and lovage and shake dry. Remove and discard the stems. Finely chop the leaves. Whisk together the oil, cucumber juice, apple cider vinegar, and the spices. Season with salt. Combine all the prepared ingredients with the dressing in a bowl and mix gently with two salad spoons. Let the salad stand for about 30 minutes. If desired, stir in some feta cubes before serving.
