Mozzarella and tomato salad with pesto

Ingredients for 2 servings:

  • 5 tomatoes
  • 2 balls of mozzarella
  • 5 tbsp Pesto alla Genovese
  • salt and pepper
  • onion(s), diced

I wanted to introduce you to my favorite mozzarella salad, which makes my mouth water just thinking about it: I slice the washed tomatoes and arrange them along the edge of a medium-sized plate. I sprinkle the tomato slices with pepper and salt, preferably a little herb salt. I can also add a few small diced onions. I cut the two mozzarella slices into roughly 1 x 1 cm cubes and place them in a small bowl. Then I add the pesto (it doesn’t have to be Genovese, but another one will work). I stir gently until all the cubes have turned a nice green color, and then I place them in the center of the plate with the tomato rim.
