Ingredients for 4 servings:
- 4 slices of bread (protein bread)
- 300 g asparagus, green
- 100 g red bell pepper(s)
- 2 tomatoes
- 1 onion(s), red
- 125 g mini mozzarella
- olive oil
- Balsamic cream
- Salt
- pepper
- Plant cream
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
First, slice the green asparagus diagonally. Clean and finely chop the bell peppers. Peel the onion and slice it into half rings. Then, fry the asparagus in a pan with a little vegetable cream over high heat for about 5 minutes. After a while, add the bell peppers and onions and fry them. Meanwhile, toast the egg white bread slices in the toaster and chop the tomato. Drain the mini mozzarella. Cut the toasted bread into small squares and add it to the pan, mixing briefly. Empty the contents of the pan into a deep plate and arrange the tomato and mini mozzarella on top. Season the salad with salt, pepper, olive oil, and balsamic vinegar.
