Arugula sandwich with Parma ham

Ingredients for 2 servings:

  • 2 slices of toast
  • 1 handful of arugula
  • 4 olives, black
  • 3 cherry tomatoes
  • 2 slices of Parma ham
  • 1 pinch of salt
  • 1 pinch(s) pepper, black
  • 2 dashes balsamic vinegar
  • olive oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Thinly slice the olives and cherry tomatoes. Halve the Parma ham. Remove the crust from the toast and briefly crisp it in the toaster; it shouldn’t overbrown. Drizzle with a little olive oil and top both slices with arugula. Now top one slice of toast with the tomato slices, season with a little salt and pepper, and drizzle with balsamic vinegar. Layer the mozzarella slices, olives, and Parma ham on top. Cover with the other slice. Then cut the sandwich in half with a sharp knife and secure the sandwiches with wooden picks. A little basil on the sandwich adds a little more color.
