Ingredients for 8 servings:

  • 3 stalk(s) leeks, large stalks
  • 3 carrots
  • 1 large potato(s)
  • 2 large onions
  • 3 garlic cloves
  • 1 piece(s) celeriac, small
  • 1 stalk(s) celeriac
  • 2 packs of herbs (frozen)
  • 2 bay leaves
  • 1 tsp peppercorns
  • ½ tsp salt
  • 1 tbsp olive oil or vegetable oil
  • 3 liters of water

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Wash, clean, and roughly chop all ingredients. Finely chop the onions and peel the garlic. Heat the oil and add the vegetables, frying briefly. Then pour in 3 liters of water. Add the spices and simmer gently in an uncovered pot over medium heat for at least 1.5 hours. The liquid will then reduce to about 2 liters. Strain and let cool. The broth will keep in the refrigerator for about 4-5 days.
