Ingredients for 4 servings:
- 500 ml tomato(s), strained
- 1 tsp olive oil
- 1 onion(s), diced
- 1 tbsp flour
- salt and pepper
- 500 ml water
- Thyme
- basil
- oregano
- Parsley
Instructions

Heat olive oil in a pan, sauté diced onion, dust with flour, and briefly fry. Deglaze with the passata (for the soup, add water; without it, it makes a simple tomato sauce). Simmer for 30 minutes, seasoning with salt, pepper, and herbs, if desired. Rice, pasta (leftovers from the day before), or baked peas are suitable as soup garnishes.
