Pizzadilla – Pizza meets Quesadilla

Ingredients for 2 servings:

  • 8 small tortillas (wheat tortillas)
  • 400 ml sauce (pizza sauce), ready-made or homemade
  • 3 packs of Emmental or mozzarella, grated
  • e.g. salami
  • e.g. tomato(s), peppers, mushrooms and pepper or topping of your choice
  • oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Perfect for parties and friends, very filling!

Skin the salami and cut into thin slices. Clean and cut any other ingredients as needed. Add a little oil to a large pan and heat briefly. Then brown the first tortilla over low heat. Spread some pizza sauce on it and sprinkle generously with grated cheese. Then immediately place a second tortilla on top. Let it heat briefly with the lid closed so that the cheese melts. Then carefully turn the quesadilla over and brown the other side a little more. Remove from the pan and place on a lightly oiled/greased baking sheet. Spread with pizza sauce and top with 4-5 slices of salami. Top sparingly with fresh vegetables, as otherwise the whole thing can become too soft!! Then sprinkle more cheese on top. Preheat oven to 200°C. Place the tray with 2-3 pizzadillas in the oven with fan assisted cooking for about 5 minutes. The pizzadillas are ready when the cheese is golden brown and the sauce is no longer too runny. Let it cool slightly before eating! Tip: For homemade pizza sauce, I always use about 1.5 packages of passata and season it with salt, pepper, paprika, fresh garlic, oregano, and chilies to taste.
