Apple strudel muffins

Ingredients for 12 servings:

  • 200 g flour
  • 80 g almond(s), ground
  • 3 tsp baking powder
  • 60 g sultanas
  • 2 apples, sour
  • 2 tsp lemon juice
  • 150 g yogurt
  • 2 tsp cinnamon
  • 100 g sugar
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 8 tbsp oil
  • 2 eggs
  • Fat, for the shape
  • 60 g sugar
  • 3 tbsp lemon juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Grease a muffin tin and preheat oven to 180 degrees Celsius. Mix together the flour, almonds, and baking powder. Peel and quarter the apples, and remove the cores. Finely dice half of the apples and mix well with the lemon juice, 50% yogurt, and cinnamon. Finely grate the remaining apples and whisk with the sugar, salt, vanilla sugar, oil, and the remaining yogurt. Stir in the eggs. Quickly stir in the flour mixture. Fold in the cinnamon apples and sultanas. Pour the batter into the greased muffin tin. Bake in the preheated oven on the middle shelf for 25 minutes. For the glaze, mix together the sugar and lemon juice; the sugar should not dissolve completely. Brush the mixture over the warm muffins and let cool.
