Greek chicken casserole

Ingredients for 4 servings:

  • 12 medium-sized potatoes, waxy
  • 4 bell peppers
  • 5 onions
  • 4 chicken legs
  • Salt and pepper, black
  • some olive oil
  • Paprika powder, sweet
  • possibly garlic

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 40 minutes; Total time approx. 2 hours

Wash and peel the potatoes, and cut into thick slices. Peel and slice the onions. Trim and wash the peppers, then cut into strips. Place the vegetables in a casserole dish or on a baking sheet, drizzle with olive oil, season with salt, pepper, and paprika, and mix with your hands. Add whole or finely chopped garlic, if desired. Wash the chicken thighs, pat dry, season with salt, pepper, and paprika, and place on top of the vegetables. Then bake in a preheated oven at 200°C (top/bottom heat) for about 90-100 minutes. Turn halfway through. Tip: You can vary this recipe endlessly with other vegetables, such as zucchini, mushrooms, olives, and so on.
